Perhaps inspired by last night's Bachelorette: After the Final Rose (yes, I watched. don't judge me!) or host Chris Harrison's deep and ponderous questions for the broken-hearted rejected bachelors such as: how are you feeling right now? (pause) how about now? (pause) hey, remember that time you left the show broken-hearted and were crying in the limo? (pause) how did you feel about that? I began contemplating our impending nuptials and future together, thus crafting my own deep and ponderous questions. And so a conversation a little something like this followed:
Katie: hey, how are you feeling about the wedding? are you nervous?
Dan: no.
Katie: scared?
Dan: no.
Katie: what about future stuff...like having kids. doesn't that scare you a little?
Dan: no.
Katie: does anything scare you?
Dan: (pause) snakes.

mmm, pudding...
I interrupt our wedding invitation assembly line to bring you some VERY important news. I have just experienced something that could quite possibly be the Best Dessert Ever. Like, seriously...the best dessert I've ever tasted. Maybe even one of the top 5 FOODS I've ever tasted. And I do not kid.
Ladies and gents, may I present to you...Magnolia's Famous Banana Pudding!! Mmmmm...

Oh. my. gosh.
I'd never had it before, but decided on a whim to pick some up tonight for a little post-stuffing-envelopes pick-me-up. Thank goodness for whims. It is the perfect combination of bananas and sweet pudding and soft, gooey nilla wafer yumminess. MMMMM!!! And apparently everyone else in blogland loves it too, so there are recipes all over the place! YAY!
Here you go:
*1 14-ounce can sweetened condensed milk
*1 1/2 cups ice cold water
*1 3.4-ounce package instant vanilla pudding mix (Jell-O brand recommended)
*3 cups heavy cream
*1 12-ounce box Nabisco Nilla Wafers (substituting not recommended)
*4 cups sliced ripe bananas

*Beat water and condensed milk together with an electric mixer until well combined
*Beat in pudding mix for 2 more minutes.
*Cover with plastic wrap and chill for 4 hours or overnight.
*Whip the cream with an electric mixer until stiff peaks form.
*Gently fold the whipped cream into the pudding.
*To assemble the dessert, select a large, wide bowl (preferably glass) with a 4-5-quart capacity. Arrange one-third of the wafers to cover the bottom of the bowl, overlapping if necessary, then one-third of the bananas and one-third of the pudding. Repeat the layering twice more, garnishing with additional wafers or wafer crumbs on the top layer of the pudding. Cover tightly with plastic wrap and allow to chill in the refrigerator for 4 hours - or up to 8 hours, but no longer! - before serving.

the 4th: mini-recap
I had big plans for this post last week. It was the Monday after 4th of July, and I'd just had an amazing and relaxing weekend with Dan and good friends. Pictures were taken and memories were made (ah, memories...) and I fully intended to share all of that on here.
But then Monday turned into Tuesday and then Wednesday and so on...and with our race against the clock to get our wedding invitations out STAT (which we are still working on this week) I wasn't able to do the kind of weekend recapping/blogging that I wanted to do.
Now that holiday weekend feels sooo long ago and I really don't have the same motivation to recap anymore. Plus I seem to only be able to blog in 15 minute increments these days since I feel like there are always pressing wedding matters staring me down from to-do lists on my desk. So I am keeping this short....with the hope that I will have another 15 minute increment to work on a mini weekend recap from this past weekend (which involved sleeping on the streets of NYC...intrigued? :)
But before I go, here is a sweet little pic that gives you an idea of just how dreamy that 4th of July was:

That's us hosting a little dinner party on Dan's rooftop with friends. The weather? Perfect. The setting? Magic. The company? Lovely! And we were even able to see a smidgen of fireworks through that tiny crack between the buildings. Good, good times.
